HUBUNGAN ANTARA PEMBELAJARAN SANITASI HIGIENE DAN PENERAPANN DI LABORATORIUM TATA BOGA UNIVERSITAS NEGERI MEDAN

The application of sanitation and hygiene principles is a crucial foundation in culinary arts education to ensure food safety, practitioner health, and the quality of learning outcomes. Although this material has been integrated and synchronized, the gap between theoretical knowledge and practical application in the field often poses an academic challenge. This study aims to empirically examine the relationship between the effectiveness of sanitation and hygiene learning and the level of implementation in the Culinary Arts Laboratory, Medan State University. Adopting a quantitative approach with a cross-sectional design, this study involved 75 students from the class of 2023 who had completed relevant courses as respondents. Data were collected using a self-efficacy questionnaire that passed validity and reliability tests. Data were then analyzed using normality tests, Pearson correlation, and simple linear regression. The study findings showed that the instrument had high internal consistency, and there was a strong and statistically significant positive relationship between the learning and implementation variables. The regression analysis revealed that learning provided a dominant partial contribution to students' hygienic behavior. The main conclusion of this study is that the quality of sanitation and hygiene learning serves as a crucial predictor in improving compliance with sanitation procedures in the laboratory, indicating that strengthening educational methods directly improves students' occupational safety and hygiene standards.
ABSTRAK
Penerapan prinsip sanitasi dan higiene merupakan fondasi vital dalam pendidikan tata boga demi menjamin keamanan pangan, kesehatan praktisi, serta kualitas hasil pembelajaran. Meskipun materi ini telah terintegrasi dalam kurikulum, fenomena kesenjangan antara pengetahuan teoretis dan aplikasi praktis di lapangan sering kali menjadi tantangan akademik. Penelitian ini difokuskan untuk menguji secara empiris hubungan antara efektivitas pembelajaran sanitasi higiene dengan tingkat penerapannya di Laboratorium Tata Boga Universitas Negeri Medan. Mengadopsi pendekatan kuantitatif dengan desain cross-sectional, studi ini melibatkan 75 mahasiswa angkatan 2023 yang telah menyelesaikan mata kuliah relevan sebagai responden. Pengumpulan data dilakukan melalui kuesioner daring yang telah lolos uji validitas dan reliabilitas, kemudian dianalisis menggunakan uji normalitas, korelasi Pearson, serta regresi linier sederhana. Temuan penelitian menunjukkan bahwa instrumen memiliki konsistensi internal yang tinggi, serta terdapat hubungan positif yang kuat dan signifikan secara statistik antara variabel pembelajaran dan penerapan. Analisis regresi menegaskan bahwa pembelajaran memberikan kontribusi parsial yang dominan terhadap perilaku higienis mahasiswa. Simpulan utama studi ini adalah kualitas pembelajaran sanitasi higiene berfungsi sebagai prediktor krusial dalam meningkatkan kepatuhan prosedur sanitasi di laboratorium, mengindikasikan bahwa penguatan metode edukasi secara langsung berkorelasi dengan peningkatan standar keselamatan dan kebersihan kerja mahasiswa.
